There are countless olive varieties and types of olive oil, but among them all, one stands out above the rest: Picual olive oil. The success of this variety lies in its remarkable ability to adapt to all types of soils and climates. Its color can range from greenish to golden, depending on the timing of harvest and extraction. Early harvests, between late October and the first half of November, produce green oil—an excellent type of oil for consuming raw, with a greenish hue and intense bitterness and spiciness, featuring notes of grass, almond, and tomato plant.

In contrast, later harvests, which follow the green oil period, produce milder oils with intense fruitiness but less pronounced bitterness and spiciness. This type of oil has a lighter color, between greenish and golden, with notes of fig leaf and artichoke.

Thanks to its fatty composition, Picual oil has high stability, resistant to oxidation and high temperatures, making it ideal for long-term storage and cooking.
